1. Overview :
Dayi Horticulture Co., Ltd
Owner: Mr. Yu-ru Weis.
  Dayi Garden features a variety of floral plants and landscape projects. In recent years, the garden has been focusing on cultivating mushrooms. To promote mushroom cultivation, Mr. Wei is planning on designing a workshop and curriculums for teaching mushroom cultivation process and related techniques. In addition, Dayi Garden will be working on developing a leisure style
outdoor cafe.

2. Mushroom overview :
 a. Origin of the name :
  Mushrooms are also known as “Aromatic Mold”. Because mushrooms contain water-soluble ingredient like adenine, special aroma and rich flavors earn mushroom the name of “Aromatic Mold”. The ingredients creates mushrooms' wonderful smells are matsucake dlcono1 and a unique ketone.
 b. Linshan's Treasure - Mushroom :

Dayi Garden
   Linshan's treasure mushrooms are the favorite among
Sanmin's restaurants. While committed to perfecting
mushroom cultivation, Dayi Garden manage its own
productions and marketing. Chemicals and fertilizers will not
be found in the garden because the garden utilizes the
method of burning Chinese mugwort to propel insects. In
addition, cultivations are discontinued for reconditioning the
mushroom fields during summer because of the significant
amount of wild molds. Using natural approach for disinfecting mushrooms, consumers shall have confidents in the quality of Dayi's mushrooms.
 c. Mushroom cultivation and harvesting :
 1. Mushroom bag cultivation :

  This method allows precise control in mushroom growth. First, chipped tree trunk of Formosa acacia will be fermented and mixed with rice husks, soybean powder, and corn powder. The mixture is then blended with lime and calcium carbonate to adjust PH level. A low-alkali environment is the best for mushroom growth. The final mixtures are bagged and stuffed with cottons. After 12 hours of disinfecting process in a 99 ℃ environment, bacteria can then be planted into the bags.

 2. Colonization :
   The process of mycelium development is called “ Colonization” and the length varies depending on varieties. The mycelium growth process lasts about 120 days though some winter mushroom series last up to 160 days. During the process, the mushroom bag will turn from brown to while as the molds develop. The conditions of the process will directly impact mushrooms' quality especially temperatures and ventilation.
 3. Maturing :

《 Mature shiitake mushroom 》
   Once mycelium is matured, mushroom caps can be
spotted in the bags. After stimulation, mushroom will grow at a
speed of doubling its size daily. After one week, mushrooms
will be available for harvesting.
 4. Harvesting :
   When mushrooms' caps turn out 50 to 80 percents, they
will be ready for harvesting. The development could last up to
four months.
 5. Roasting :
  Roasted mushrooms infuse the air with wonderful aromas. The roasting process last between 26 to 32 hours or until 95% of dryness in order to bring out the rich flavors. To test mushrooms' quality, a brisk mushroom breaking indicates higher quality. Darker mushrooms are also better. Because of the high humidity in Taiwan , it is necessary to wrap mushrooms carefully prior to storing mushrooms in refrigerators for preserving the flavors. Fresh mushrooms from Dayi Garden will make you worthwhile!
 
3. Cooking :
   There are varieties of cooking methods for fresh mushrooms such as roasting, boiling, frying, or stir-frying. Sampling the fresh cooked mushrooms is a great experience for everyone. It is recommended that mushrooms shall be wrapped with foils prior to roasting so that rich flavors of mushrooms will be sealed. Pinch of salt in mushrooms during cooking will bring out nice tangy flavors.
  Mushroom Sashimi :

   Leave mushrooms and tree mushroom in boiling water for
few minutes and served with sashimi and soy sauce mixture.
The refreshing taste leaves you with a wonder aromatic flavor.
  Mushroom pizza :
  Spread chopped vegetable of your choice, Chinese rice
cake, and grated cheese on top of a palm size fresh
mushroom. Bake it for 8 minutes. The freshness and sauces
from the mushroom will be retained when mushroom is served.
Mushrooms can also be cooked with special blends of apple tea or lemon honey tea. As long as the mushrooms are fresh, cooking mushrooms will never leave you unsatisfied.
 
4. Pricing and Marketing :
   Fresh picked mushrooms are NT $100 dollars per catty and are the favorite of market shoppers or restaurant in Fuhsing Township . Winter mushrooms and summer mushrooms are between NT$ 450 to 600. Through words of mouth, Dayi Garden has attracted many visitors over the years.

5. What we learned :
   We were very impressed with the heavenly taste of mushrooms. Through the owner's guided tour, we learned that the owners had dreams of expanding the existing varieties of mushrooms and developing a training farm for mushroom cultivation. We were determined to re-visit the garden when it is done with the expansions. We also had an opportunity to see the mushroom roaster made by Mr. Wei. At first, we hesitated to try the fresh out of oven mushrooms. We couldn't believe that mushrooms taste so good!
