Seasonal Characteristics of Tea
Spring Tea: Highly fragrant, this tea tends to make one more hot-tempered.
Summer Tea: Has a slightly smoky flavor but lacking in sweetness.
Autumn Tea: Mild and has the floral aroma of oolong tea. Ideal for tea novices.
Winter Tea: Has a rich sweetness, mildly fragrant, relaxing.




The Taste of Taiwan's Tea Leaves
1. Wenshan PaoChung Tea

     Wenshan PaoChung Tea produces mainly QingXin Oolong, the best quality tea being the PingLin tea while tea produced in ShiDing, XinDian, ShenKeng, WuLai and SanXia comes a close second in quality. Tea produced in NanGang and XiZhi is called NanGang SouChong -- a high quality tea similar to PingLin tea. The common characteristics of these two tea varieties are that they taste more bitter than other good quality teas and have leaves that are thinner with longer tips.
2. MuZha TieGuanYin
MuZha TieGuanYin tastes like the FuJian AnXi TieGuanYin and has a unique mountain flavor. MuZha TieGuanYin is roasted on either medium or high fire. The tea that has been roasted on high fire has a rich aroma, is of the right consistency and smoothly sweet, an excellent tea that continues to be popular -- the tea of teas.
3. NanTou Oolong Tea
(1)LuGu Tea: DongDing tea has a mild and pure aroma, is lighter in taste than PaoChung Tea with only a tinge of bitterness.
(2) MingJian Tea: Mostly Oolong tea. A taste similar to LuGu tea but is more bitter.
(3)CaoDun PingDing tea: DongDing RuanZhi (soft branch) Oolong tastes similar to DongDing tea and is one of the 3 main products in the tea regions of NanTou.
4. BingFeng Tea(PeKoe Oolong Tea)
Produced during the summer and autumn but primarily in the summer. This tea, produced at high temperature, is mildly fragrant and sweet. It tastes sour, somewhat like food that is beginning to rot ?a unique taste of the BingFeng tea.
